Quick Winter Squash

Ingredients: 

1 squash (banana, butternut, hubbard or kabocha. For acorn squash, cut in half, remove seeds and cook as directed above.
¼ cup water or fruit juice

Preparation:

Wash the outside of the squash with dish soap and water. Pat dry. Cut the squash into serving size pieces. Place the pieces, with cup side up, in a microwave safe dish. Sprinkle the water or fruit juice on the squash pieces. Cover and cook in the microwave for 10 to 13 minutes on high or until fork tender.
